Best dinner ever...


Vegetable noodles

Tonight we had one of the yummiest dinners. As usual we leave dinner to the last minute so when I looked in the fridge i was not surprised we didn't have to many options for dinner. It was Friday after all (we go to the organic farmers market every Saturday). Well by nothing I meant:

2 zucchini's

half an eggplant

A handful of sprouted mixed legumes

7 tomatoes, Two spring onions

One small head of broccoli

One glove of garlic

One avocado

Three small mushrooms.

It didn't look like much but I decided to make something with all of it ready for our fresh veggies from the market tomorrow.

The master plan...

First I boiled up the tomatoes with some garlic to make a tomato sauce. Then I pulled out my handy spirilizer and made some zucchini noodles. I cut up all the other veggies into small bite size cubes and put them into a hot pan with a little coconut oil. I sautéed them for a couple of minutes leaving them still a little crispy. Once the sauce had reduced I stirred it though the sautéed vegetables. Next I combined the veggie sauce mix into the bowl of (raw) zucchini noodles. I stirred though the diced avocado and sprouted mixed legumes. Finishing it off with a squeeze of lemon and some chill for myself and my husband.

It was so yummy, it just goes to show its the dinners you don't plan or put much thought into that can sometimes turn out to be the best.

Best dinner ever.......
